A 'No Kid Hungry' recipe tribute!

My Gluten-Free Fish Sticks are made with love for the Kids!  A tribute to 'No Kid Hungry'.  Choosing local seafood not only supports your local fishery, its a recipe that is budget-friendly and a winner with the whole family.
Any left-overs go right into making fun Fish Tacos!

Ingredients

1 pound
White Fish (*see substitutes in notes)
1 cup
Gluten-free breadcrumbs
1 tablespoon
Vegetable Oil
1 cup
Chipotle Mayo (store bought or see instructions)
1 tablespoon
Chipotle spice

Instructions

Cut white fish into strips as in video.
Coat with gluten-free breadcrumbs.
Heat pan to med for few minutes.
Place strips of fish in pan and sear on both sides for 2 1/2 - 3 minutes.
Stack fish on serving plate or upright in cups. Make it fun!
Mayo: mix chipotle to your liking with 1/2 cup of light mayo or yogurt.
Serve with mayo on the side for dipping.
Squeeze lemon on fish or in mayo mixture.

Notes

*Because there are concerns about farm-raised Tilapia, you can substitute with other white fish such as, barramundi, haddock, cod, flounder, and rockfish or dogfish.
