Fiddleheads have Omega -3 and Omega-6 fatty acids, iron and fiber!  Finding them is a real treat!
Fiddleheads are furled fronds or ferns that tend to grow around march-lands and along river banks.  Both of which you'll find in the province of New Brunswick, Canada, who claim to be the "Fiddlehead Capital of the World". 
But you can find them in other regions of North America.  Springtime is when they flourish so grab them while you can.

When we were shooting our story in New Brunswick, Canada, I had no idea one of the oldest smoke houses was located only a short distance from where I grew up; in a quaint fishing village called, Cap Pele.  What they do is quite impressive and was a true Off the Beaten Palate story.  Watch and learn more!

Its one of the four Atlantic Provinces, and has more characters than Monty Python!  Psst, I have never been to Newfoundland.  But yearning to go!  I have friends 'over there', would love to explore the saltbox houses, the rocky cliffs, go whale-watching and see the massive icebergs.  And of course, cook cod with a local Newfoundlander!  Actress, Julianne Moore commented during the premiere of the movie, "The Shipping News", that Newfoundland itself, was one of the characters of the movie.  On any given day it could rain, sleet, snow, or bless you with the sun. I love watching the passion she puts into this- every step of the way, as I captured her at Gradisca Ristorante in the heart of the West Village.
Every few months she comes from Bologna to make pasta for her Son's restaurant.
I look forward to watching her turn this pasta into Ravioli, Tortellini, Pappardelle, and more.
